One of the shiniest jewels in the Cotswolds’ crown is the spa town of Cheltenham, thanks to its impressive Regency architecture, tree-lined promenades at every turn, and a vibrant food scene. Leading the town’s food scene is Le Champignon Sauvage and its Michelin chef, David Everitt-Matthias. Below, Chef David offers tips on some of his favourite things to see in the area and where to experience great food.
Chef David has been a shining light in the world of gastronomy for almost four decades, and his skills are now widely recognised. According to the Observer Food Monthly Awards, “[this] fine-dining restaurant, refined without being stuffy, has been winning acclaim since 1987… food that is both style and substance.”
Recently noted by The Telegraph as one of the 15 best value Michelin star restaurants, Le Champignon Sauvage offers a seasonally driven and locally sourced menu, which is priced from £43 for two courses and £50 for three courses for the set lunch and dinner (excl. Saturday evening).
Some of the menu highlights include Steamed mackerel, apple and celeriac remoulade, and ponzu dressing, followed by Sea bream, buttered monk beard, buttermilk, and horseradish dashi. Although David is a dab hand in the kitchen, he also knows a thing or two about the area in which he plies his trade.
