Aulis Phuket, Simon Rogan’s Michelin-starred 15-seat chef’s table in Phang Nga, Thailand, has unveiled “Friends of Aulis Phuket”. This collaboration series starts from May and takes place at its home in the stunning Iniala Beach House. The series will feature a lineup of renowned restaurants and chefs from around Asia, all united by a shared philosophy on sustainability and local sourcing.
Visiting restaurants in Friends of Aulis Phuket includes chef Deepanker Khosla’s Neo-Indian HAŌMA from Bangkok and chef Richie Lin’s MUME from Taipei, celebrated for its innovative approach to Taiwanese cuisine.
Also partaking in the collaborative series is Locavore NXT (November 2025) led by visionary chefs Eelke Plasmeijer and Ray Adriansyah from Ubud, Bali, this year’s winner of the Sustainable Restaurant Award from Asia’s 50 Best Restaurants 2025 and Toyo Eatery and Inatô, two award-winning Filipino restaurants that showcase the diverse culinary heritage of the Philippines.
Opened in December 2023, Aulis Phuket is the first Thai outpost of Rogan’s chef’s table concept, located on the grounds of Iniala Beach House in Phang Nga. An extension of Rogan’s style and principles at three Michelin-starred L’Enclume in the UK, Aulis highlights a dedication and commitment to local surroundings and produce.
Head Chef Charlie Wilson’s experience in Michelin-starred restaurants worldwide has provided him with an innovative approach to cooking that has seen him excel with a flair for ingenuity. With as many ingredients sourced locally in Thailand as possible, the restaurant offers a dining experience immersed in a deep respect for seasonality and locality.
Aulis Phuket x HAŌMA (Collaboration Dinner on 21-22 May)
Michelin-starred and Michelin Green-starred HAŌMA, led by Chef Deepanker Khosla (above), is a Bangkok-based Neo-Indian fine dining establishment with explosive flavours and a socially and environmentally responsible heart.
HAŌMA is the result of a deep exploration of Chef Khosla’s roots and a journey that takes guests from East to West, from the land to the sea and through every corner of the immense Indian territory, however, all done with Thai produce, most of which they grow themselves. The restaurant has been awarded the Sustainable Restaurant Award by The World’s 50 Best Restaurants List and earned its first Michelin star in late 2022.
Aulis Phuket x Mume (Collaboration Dinner on 11-12 June)

A unique two-night collaboration featuring Aulis Phuket, Toyo Eatery and Inatô promises a fascinating blend of Thai, British, and Filipino flavours and traditions. Toyo Eatery in Manila reimagines Filipino cuisine through a deep exploration of local flavours and traditional cooking methods.
Chef Jordy Navarra’s culinary creations have propelled Toyo to be named the Best Restaurant in the Philippines six times by Asia’s 50 Best Restaurants. Inatô, another Manila-based restaurant by Chef JP Cruz, celebrates Filipino heritage through a gastronomic journey inspired by local and global produce.
