
The internationally revered Gault&Millau guide launches its first Moroccan edition, shining a light on the Kingdom’s vibrant and diverse culinary scene.
The renowned Gault&Millau guide, a global beacon for gourmets and gastronomes, has officially launched its Moroccan edition—marking a historic moment in the recognition of Morocco’s extraordinary culinary heritage.
The launch event was held on Monday, 20 October 2025, at the elegant Conrad Rabat, a palace that beautifully marries tradition and modernity, offering an apt setting for a celebration of Moroccan cuisine’s artistry and diversity. Among those present were Mr Patrick Hayoun, President of the Gault&Millau group, and Steve Berdah, President of Gault&Millau Morocco, alongside Chef Lahcen Hafid, an international culinary luminary appointed Ambassador for this first Moroccan edition.
The press conference brought together key figures in Moroccan gastronomy, including Khadija Bensdira, Fayçal Bitioui, Kandil Abdelkader, Aïcha Lahlou and Taher Ait Errami, whose collective dedication signals a shared commitment to elevating Moroccan culinary talent on the world stage.
This inaugural guide is designed not merely as a directory but as an inspiring portrait of hundreds of restaurants across Morocco’s three major regions, each carefully selected for authenticity, creativity, and excellence.
Set for publication in May 2026, the guide will kick off with restaurant reviews starting in November 2025, offering food lovers, critics, and industry insiders a valuable compass to explore Morocco’s rich gastronomic landscape.

2025 has been a landmark year for Gault&Millau’s global reach, expanding into new territories beyond Morocco, including Saudi Arabia (above) and Poland. This year alone, the guide has launched editions in other burgeoning markets, reaffirming its role as an international standard-bearer of culinary excellence. With its origins dating back to 1972, Gault&Millau continues to champion independence, expert evaluation, and innovation, now represented in over 20 countries worldwide.
Chef Lahcen Hafid, with his impressive pedigree that includes prestigious Parisian kitchens such as Hyatt Regency Paris Madeleine and the Ritz Paris, brings invaluable expertise to the Moroccan project.
