Coming out from the kitchen to greet diners, both Best and Osborn charmed all those lucky enough to taste their creations with their light-hearted humour and jokes. Best who helms the Seafood Grill & Prime Steakhouse on the Genting Dream will also oversee the Seafood Grill on board the Explorer Dream. He informed us that he would be heading the Seafood Grill in Genting’s Dream Cruises other cruise ship, the Explorer Dream.

Seafood Grill by Mark Best on the Explorer Dream offers guests uniquely styled dishes with Australian influences while enjoying the relaxing ambience of al fresco dining under the southern stars. During Explorer Dream’s Australia deployment, Chef Mark Best will also be hosting a series of Market to Table experiences.

Here guests will have the opportunity to join Best in visiting local markets, meet resident farmers face-to-face and source local produce at various ports. From there, guests may enjoy exclusive and immersive cooking classes where Chef Best will create and demonstrate a selection of dishes with the food sourced at the markets.

Homeported in Sydney and Auckland from October this year to March 2020, the Explorer Dream is the latest addition to Genting Cruise Lines’ Dream Fleet consisting of a trio of luxury cruise ships, with the World Dream making up the third cruise ship.

The main course was chef Best and Osborn’s pièce de résistance, serving up a choice of either Steamed Grouper with Prawn Custard with Carrots Slow-Cooked with Lemongrass and paired with Stag’s Leap Chardonnay 2016 or Slow-Braised Wagyu Short Ribs with Charred Onions and Tamarillo Salsa.

For those who still had some room for dessert; The Frozen Mandarin Curd with Mandarin Sherbert paired with Veuve Clicquot Ponsardin and the Fig and Almond Tarte Fine with Cinnamon Beurre Noisette and Vanilla Ice Cream paired with Vinferno Bonny Doon Grenache Blanc 2013 proved to be a nice way to end this most magnificent dinner. It was made even more memorable with the excellent service and knowledgeable staff.

After dinner, we adjourned to the Zodiac Theatre to catch with revue show by the dance troupe Snio called “A Tale of Two Dreams.’ With LED-lighting display, sound effects and gravity-defying acrobatics, this was a show which wowed the audiences judging from the applause this Ukrainian group received.

As this was our last night on the Genting Dream, a party was planned on the main pool deck. Themed’ Colour My World’ it was indeed a colourful and fun-filled affair with music and bands and singers adding to the festive atmosphere. Some staff members joined in on stage and impressed the guests with their coordinated and well-choreographed dance moves.

And just when you thought the night couldn’t be any better, fireworks shot out from the funnel of the Genting Dream, lighting up the skies with a multitude of dazzling coloured sparks and twinkles.

As the first-ever fireworks at sea in Asia, this glittering and euphoric night-time display summed up our entire experience onboard this dream-like vessel.
