Love Fresh Berries is encouraging everyone to make the most of British crops by adding raspberries, strawberries, blueberries, and blackberries to their plates. To get you started, the team has put together three easy-to-make, taste-bud-pleasing recipes.
From quick berry wraps to a healthy berry nut butter or refreshing summer berry swirled lollies, these easy-to-make recipes are perfect for warm summer mornings or as a refreshing, healthy snack during the day.
Berries are the ultimate summer treat—naturally sweet, packed with vitamins, and bursting with flavour, they are the ideal ingredient for summer breakfasts.
Rhiannon Lambert, BSc MSc Registered, an award-winning Nutritionist, says, “Fresh berries are nutrient powerhouses that are perfect to enjoy during the summer season—especially when they’re grown on our doorstep.
“British berries – like strawberries, raspberries, blueberries and blackberries – contain antioxidants and vitamins that may support heart health, the immune system, and skin health. They’re also a source of dietary fibre, which helps our gut stay healthy and happy and are low in calories and sugar, so make a delicious breakfast, snack or sweet treat.”
With berry season right around the corner and strawberries kicking us off in May, Rhiannon has given us her top three tips for incorporating berries into your breakfasts.
Rhiannon adds, “Whether topping your morning porridge with a small portion of blueberries, blending for a mixed berry smoothie or enjoying on top of your cereal, berries at breakfast are a great way to maximise nutritional benefits whilst making your first meal of the day both tasty and may contribute to supporting a healthy immune system!”
Below, you’ll find a selection of fresh berry recipes perfect for the peak of the British berry season.
The Berry Wrap
(Makes one and is ready in 5 minutes)
Ingredients
- 1 tortilla wrap
- 25g soft cheese
- 2 tsp honey
- 60g mixed raspberries, blueberries and sliced strawberries
Method
1. Make a cut with scissors into the centre of the wrap. Spread the wrap with the cheese and then drizzle over the honey.
2. Place the raspberries on one quarter, the blueberries on another and the sliced strawberries on the third. Fold the wrap in quarters – with the cut at 6 o’clock, bring the cut point up to 12 o’clock, then bring the wrap from 9 o’clock to 3 o’clock and finally back to 6. Serve as is, or heat a griddle pan and toast to enjoy!
Summer berry swirled lollies
(Makes 10)
Preparation time: 15 minutes
Freezing time: overnight
Ingredients
- 75g (3oz) blackberries
- 150g (5oz) raspberries
- 4 tsps runny honey
- 300g (10oz) flavoured Greek yoghurt – vanilla, honey or coconut
Method
1. Mash blackberries on a plate with two teaspoons of the honey using a fork.
2. Do the same with the raspberries and another two teaspoons of the honey on a second plate.
3. Layer alternate spoonfuls of mashed fruits with the yoghurt in plastic shot glasses.
4. Add lolly sticks and freeze overnight. To serve, dip moulds briefly in warm water, then lift out of the moulds and serve.
Berry Nut Butter
Prep time 10 minutes
Cook time 5 minutes
You can make it vegan with vegan maple syrup
Ingredients
- 200g hazelnuts – or you can use almonds, cashews, peanuts
- A pinch of salt
- 125g raspberries – blueberries or strawberries also work well
- 2tsp honey or maple syrup or to taste
Method
Preheat the oven to 200 °c/fan oven 180 °c/gas mark 6. Place the nuts on a baking tray and toast for 5 minutes until golden. You can also do this in a pan, but keep them moving to ensure even cooking. Set aside to cool. If the nuts have their dark papery skins still attached, roll them around in your hands to loosen them and discard them.
While the nuts cool, place the berries in a pan, roughly crush them with a fork, cover, and cook gently for a couple of minutes until they have released their juices. Remove the lid and continue cooking for a minute or two more to create a sticky jam.
Leave until cool.
Blend the nuts in a food processor or blender—you can’t do this by hand. It will take several minutes for the nuts to break down and release their oil, and you will need to stop and scrape down a few times, but eventually, you will end up with a soft, shiny paste.
Stir in the salt and berries, taste, and add honey or maple syrup if necessary. Store in an airtight container in the fridge for up to a week, and enjoy on porridge or toast.
Tip
You don’t have to roast the nuts beforehand, but it does enhance the flavour.
