Jamie Ndah talks to Bruno Le Gac at the Constance Lémuria Seychelles, discussing his fine dining, the definition of luxury, golf and the stunning renovation programme undertaken at this premier luxury resort on Praslin Island.

LM: How long have you worked in the hospitality industry, and where did your journey begin?
BLG: The journey began 30 years ago in a kitchen. I started as an apprentice in a restaurant in Burgundy, after falling in love with the delights of culinary practices during a summer job to help earn some pocket money.

LM: What was your first General Manager position?
BLG: My first General Manager post is here at Constance Lémuria, and I have been here just over three years now.

LM: Why has Constance Lémuria Seychelles become such a leading hotel in the Seychelles over the years?
BLG: We continue to put in a lot of work to improve on every single aspect of the business. The association with Leading Hotels of the World, Green Globe, and the focus on training, has given us a huge boost over the past few years. Also, the long-term vision of the company and the continuous investment in maintaining and developing the hotel is a key factor too.

LM: What is your personal definition of luxury?
BLG: It can be two things: Luxury in simplicity: being in a magical place alone or with my close family

LM: What luxurious item could you not live without?
BLG: My Italian shoes

LM: What gastronomy delights can guests explore at the hotel?
BLG: We cater for a wide range of tastes. Obviously fresh fish in Creole flavours, mangoes and breadfruit from our gardens are just some of our many varied options on offer.

LM: What is one of the most popular dishes on the menu at your fine dining restaurant, DIVA?
BLG: The rack of lamb is a firm favourite with our guests that dine at DIVA.

LM: What tips or recommendations can you give our Luxurious Magazine readers on must-see attractions whilst visiting Praslin Island?
BLG: There is so much to see and do on Praslin Island, but I would certainly recommend visiting Vallée de Mai and Fond Ferdinand as they are both beautiful. Anse Lazio, through the trail, and lunch at Bonbon Plume is a wonderful experience. Also, a boat trip to Curieuse and a visit to La Digue is a must too.

LM: The Constance Lémuria Seychelles has the only 18-hole Championship Golf course in the Seychelles. Does this help attract a number of golfers to the resort?
BLG: Absolutely. Where else can you stop for a swim at Anse Georgette before finishing your round of golf?

LM: Tell our Luxurious Magazine readers about the U Spa by Constance? What else is on offer for guests at the facility?
BLG: There are superb Valmont products and daily treatments on offer. We also have excellent treatments by Brice Nisham and the former Mr Seychelles is our gym instructor too!

LM: It seems there are exciting times ahead and you have just undergone a renovation programme, a complete makeover to two of your restaurants, upgraded services and new amenities. What can guests now expect?
BLG: A much more exciting and vibrant hotel, new cool restaurants and bars, a revamped culinary experience, a new wine tasting experience in the cellar, the eco-kiosk and the encounter with our turtle manager Robert. Overall guests can expect an even smoother and upgraded experience throughout their stay, punctuated by little surprises and discoveries. A cooler, brighter and more modern concept than before awaits our guests.

LM: Describe your property in one word.
BLG: Beautiful
