ThinkWine, led by French sommelier Romain Loriot, constantly evolves the ways wine and food come together. They have just announced the exciting things they have in-store for 2022, and for this year, they’re introducing winter cheese fondue nights every Monday and Wednesday and a line-up of restaurant takeovers that will be commencing from this month.

The January-March restaurant takeovers at ThinkWine
For 2022, ThinkWine will be relaunching its series of pop-ups by some of Hong Kong’s most popular restaurants, including Frantzen’s Kitchen, 22 Ships, Chachawan and more. The pop-ups provide expert chefs with the opportunity to showcase exclusive dishes to a wider audience that are paired with ThinkWine’s exceptional selection of wines for one night at a time.

Each of the restaurant pop-ups will be taking place at ThinkWine from 6:00 pm until late. The pop-ups will be serving 5-6 unique dishes (ranging from HK$60 – HK$150 per dish), or patrons can opt for a combo set to pair with ThinkWine’s selection of specially curated wines.

The restaurant takeover schedule in 2022 starts with the following:

  • 12th January (Wed) – DAM:A Noodle Bar by Chef Yong Soo Do
  • 27th January (Thurs) – AWA AWA by Chef Joe Chan
  • 9th February (Wed) – 11 Westside by Chef Esdras Ochoa
  • 23rd February (Wed) – Sushi Kuu by Chef Satoru Mukogawa
  • 16th March (Wed) – CENSU by Chef Shun Sato
  • 30th March (Wed) – Bedu by Chef Corey Riches

About the 11 Westside restaurant

11 Westside is an excellent place for those who are passionate about Mexican food to head to. At its helm is Chef Esdras Ochoa, who some will recognise from his appearance on the Netflix program, The Final Table. Chef Esdras (below) is known for his expertise in making authentic tasting Mexican Taco’s; however, there will be far more than this on the table at the pop-up.

Guests will get the chance to experience handmade corn tortillas and tacos, guacamole made at the table, succulent meats and authentic Salsa Molcajete within a spacious and modern interior. The restaurant takeover offers guests the chance to relax, kick back in lively surroundings, and socialise with other wine and food fans.

About the Bedu restaurant and bar

Bedu is a modern Middle-Eastern bar and restaurant located in the Central region of Hong Kong. It offers a cosy ambience and utilises a semi-open kitchen concept. It is known for its use of smoky flavours and bold spices, which guests will no doubt notice as the dishes make their way from fro the grill to the tables.

In addition to the kitchen and restaurant is the bar where guests can enjoy refreshing concoctions that have been inspired by Middle-Eastern culture and have been designed to complement the dishes on the menu.

The ThinkWise Winter cheese fondue nights
Each week, every Monday, Tuesday and Wednesday from now until the end of the Winter season, ThinkWine will be whisking guests away to a cosy chalet in the Swiss Mountains for an exceptionally delicious, authentic tasting cheese fondue.

This delightful experience is priced at just HK$300 per person. The cheese fondue will be served with truffle ham, potato, Bayonne ham, coppa and saucisson and of course, as much cheese as you can eat.

If you’d like to make the experience even more memorable, for HK$388, guests will be able to add on premium smoked salmon or an appetiser of oysters.
