ANDŌ, JIA Group’s One Michelin-starred restaurant, will be presenting an exclusive wine-focused dinner collaboration by Wine Director Carlito Chiu with leading sommelier Della Tang on the 2nd of November.

Carlito Chiu is an accomplished professional with a deep-rooted passion for the world of wine and hospitality. With extensive experience in renowned wineries in Australia and esteemed Michelin-starred restaurants in Hong Kong, he currently holds the esteemed position of Wine Director at Andō.

Combining creativity and intuition, Carlito has mastered the art of creating extraordinary flavour combinations that elevate the dining experience. His approach transcends traditional principles as he fearlessly challenges conventions, expertly seeking unconventional pairings that surprise and delight guests.

Drawing from his diverse background, Carlito seamlessly incorporates the concept of terroir, skillfully showcasing the unique characteristics of each wine in his pairings.

Carlito has been honoured with several prestigious awards for his innovative and adventurous style. In 2023, he clinched the “Best of the Glass List” and “Best Medium-Sized List” awards in Asia, along with the “Year of Pairing” award in Hong Kong. These accolades solidify his reputation as a trailblazer in the field of wine pairing in Asia.

Della Tang is a dazzling new star in the wine industry. Within the first year of opening for Ensue (ranked 31st in Asia’s 50 Best Restaurants in 2023), her exclusive wine list has won many awards, including ‘Best Wine List’ and ‘Best Champagne List’ in China in 2020.

At Ensue, Della Tang has curated a dazzling array of references that range from notable estates to understated grower champagnes on the wine list. With a strong passion for food and wine, she has helped to design wine pairings that complement the culinary prowess and seasonal cuisine of the restaurant.

In 2020, Della won the title of ‘2020 China’s Best Sommelier’ and ‘Best Champagne Sommelier’, and this year, she received the inaugural Beronia Asia’s Best Sommelier Award 2023 at the Asia’s 50 Best Awards Ceremony.

With her remarkable selection of notable estates and grower Champagnes, Della showcases her attention to detail and passion for wine.

Inspired by their recent trip together to Austria and Germany, Carlito and Della aim to highlight the diversity and complexity of wines from these renowned wine-growing regions.

From the microclimates and soil types to the unique grape varietals, each region brings its own set of factors that contribute to the exceptional quality of the wines produced.

Guests attending this extraordinary dining experience will indulge in a seven-course menu prepared by Chef/Owner Agustin Balbi. Throughout the evening, guests will savour a total of 10 glasses of expertly paired wines carefully selected by both Carlito and Della.

The first half of the degustation will feature two glasses of wine per course, one selected by each expert. For the second half, Carlito and Della will collaborate to choose one wine pairing per course, drawing inspiration from their interactions with wineries, winemakers, and locals during their trip.

Carlito was particularly captivated by the elegance of Grüner Veltliners, which boast crisp acidity and vibrant fruit flavours. He also found inspiration in the renowned Rieslings of the Mosel region in Germany, known for their delicate aromas and balanced sweetness.
