Rosewood Hong Kong’s Cantonese restaurant, The Legacy House, is celebrating the new harvest of wild mushrooms from the Yunnan province in southwest China. The restaurant’s Chinese Executive Chef Li Chi-Wai has created a new seasonal menu with eight new dishes that showcase the deliciousness of wild mushrooms.

If you’re a fan of mushrooms, you need to head down to central Tsim Sha Tsui waterfront, where The Legacy House at Rosewood Hong Kong will showcase the magnificence of one of nature’s fabulous creations, the mushroom.

From now until the end of September 2022, The Legacy House will be serving an exquisite selection of dishes that feature freshly foraged mushrooms delivered twice weekly from Yunnan. The province is known for its mushrooms’ variety and delicacy. The summertime monsoon creates a treasure trove of fungi, which draws in everyone from amateur foragers to experts and entrepreneurs.

Today, there are at least 1,000 edible varieties of mushrooms, including lichen, wood ear and porcini, which grow in the forests and meadows of Yunnan. High in protein and low in fat, mushrooms are revered for their health and medicinal properties, as well as reputed aphrodisiac qualities.

The limited-time Yunnan Mushroom Menu contains eight new dishes by Chef Li, highlighting the unique flavours and versatility of wild mushrooms. Highlights include Poached Geoduck (HKD420), which has been softly poached with luffa and Yunnan’s jicong or termite mushrooms, that only grow on termite mounds in the wild.

The Swollen Stalked Cat Mushroom is a mild, sweet, firm and versatile mushroom variety and the star of the Wagyu Beef Stir-Fry (HKD780.) The mushrooms are wok-fried with green onion, chilli and wagyu beef to create a harmonious dish. The beloved wild Chanterelle Mushroom can be enjoyed with Marinated Fish Skin (HKD280), featuring premium caviar.

Finally, a dish that incorporates three varieties of mushroom is the Pan-Fried Fresh Wild Mushroom Combination (HKD680), a highly nutritious vegetarian dish of Yunnan mushrooms, including swollen-stalked mushroom, termite and the highly elusive matsutake.
