Sushi Fujimoto, led by Kenichi Fujimoto, and two Michelin-starred Arbor, helmed by Chef Eric Räty, have announced that they will be combining their culinary prowess for a second time on a collaborative dining event taking place on Wednesday 6th March (dinner only) and Thursday 7th March 2024 (lunch and dinner).

Following their first successful collaboration last year at Arbor, the two chefs are once again joining forces to present a masterful symphony of Nordic-Japanese and Edomae finesse using the finest Japanese ingredients, this time at Sushi Fujimoto.

Sushi Fujimoto is known for its dedication to preserving the Edomae-style sushi tradition and offers an intimate and authentic omakase experience at its nine-seat sushi counter. Chef Kenichi Fujimoto, trained under sushi masters Shinji Kanesaka and Takashi Saito, brings his expertise to Hong Kong in his first solo venture, ensuring a daily arrival of top-quality ingredients from Japan.

On the other hand, Arbor, led by Finnish Chef Eric Räty, is celebrated for its nature-driven concept that seamlessly blends Nordic sensibilities with fresh Japanese ingredients. As chef-owner at Arbor, Eric brings measured skills, seasonal flair, sharp refinement, and tasteful creativity to Hong Kong’s spectacular dining scene.

“The precision and simplicity inherent in the art of sushi mirror the guiding philosophy of my cuisine. Inspired by my Nordic background, my culinary approach focuses on using innovative techniques and the finest Japanese ingredients as the cornerstone of my mission. I am truly looking forward to blending the best of both worlds while also pushing creative boundaries in our second collaboration with Chef Kenichi,” shares Chef Eric Räty.

Taking place at Sushi Fujimoto on both days, the special event will offer an exclusive collaborative menu of up to 12 dishes priced at HK$3,888+10% per guest. Dinner rounds on both nights are scheduled for 6 pm to 8 pm (round 1) and 8:30 pm-late (round 2).
