Osteria Marzia's New Ocean-focused Dishes By Executive Chef Luca Marinelli

On the ground floor of The Fleming in Wan Chai lives Osteria Marzia, a vibrant celebration of Italy’s coastal cuisine. Drawing from his southern Italian heritage, Executive Chef Luca Marinelli has meticulously crafted a selection of seasonal dishes and a tasting menu that celebrates the ocean’s bounty, showcasing the finest catches of the season.

New Autumn Dishes at Osteria Marzia
Osteria Marzia introduces three new seasonal dishes, including Fusilli e Calamarata (HK$288), a fusion of two styles of pasta bathed in a creamy broccoli sauce made from fresh anchovies, garlic confit and clam stock.

Topped with thyme, garlic, tomato confit, broccoli, bottarga, lemon juice and Sorrento lemon zest, this dish offers a symphony of light and refreshing flavours.

Ommagio ad Uliassi (HK$388), a shellfish Soup in Albanella jar, inspired by Chef Luca’s mentor, the renowned Italian Chef Mauro Uliassi and his three Michelin-starred restaurant, combines Japanese clam stock, steamed crab, steamed Mantis shrimp and Italian tiger prawn.

Dive into the Tris di Crudo (HK$318), a celebration of the sea featuring three variations of raw seafood. The Gambero Rosso option presents marinated red prawn accompanied by zucchini slices, zucchini puree, popped quinoa and Mediterranean sea urchin sorbet.

Alternatively, indulge in the Seppia Tagliatelle, offering slow-cooked squid seasoned with salt, pepper, lemon juice, lemon zest, olive oil and basil, finished with breadcrumbs and pistachios.

Lastly, savour the Seabass Prosecco, which invigorates the palate with cured sea bass enhanced by salt, Sorrento lemon zest and Prosecco gel.

New Autumn Five-Course Tasting Menu
In addition to the new dishes, Osteria Marzia has announced the launch of their new autumn five-course tasting menu. Priced at HK$788 plus a 10% service charge per guest, the menu is available daily from 12 pm onwards.

Guests also have the option to enhance their dining experience with the sommelier’s four-glass wine pairing selection for an additional HK$398.

The tasting menu showcases an array of fresh and delectable family-style dishes such as Italian baby cuttlefish with green pea, mint, and squid ink, Acqua Pazza (sea bass) served with Insalata mista and freshly churned Italian Gelato.
